Suminagashi, which translates to "floating ink," refers to the mesmerizing marbled wave-like patterns that run through the blade, from tip to heel. These intricate, fluid patterns are revealed with each sharpening, unveiling a new mosaic each time. This technique requires the mastery of the most skilled artisans who can fuse metals into complex, puzzle-like formations, creating knives that not only excel in performance but also serve as works of art. The beauty of Suminagashi lies in the fusion of aesthetics and precision, making these knives as much a visual pleasure as they are a culinary tool.

Our handmade Yoshihiro Blue Steel Suminagashi knives showcase the highest level of craftsmanship, reflecting the artistry of our master artisans. The Aoko Blue Steel #1 used in these knives has a 64 HRC rating, ensuring exceptional durability and edge retention. This steel is expertly forged with iron to create an elegant marbled finish that is distinctive and unique to each blade. As the knife is used and sharpened, the floating ink patterns evolve, making each knife truly one-of-a-kind.

The Yoshihiro Blue Steel #1 Suminagashi knives are complemented by a traditional Japanese-style handcrafted Ebony wood handle, known for its luxurious appearance and strength, and affixed with a Water Buffalo horn bolster for enhanced durability and balance. To protect the blade when not in use, a rare artisan-crafted Saya is included, a protective wooden sheath made of premium Ebony wood.

The Takobiki Sakimaru, a long slicing knife in this collection, is specifically designed for cutting paper-thin slices of fish for sashimi. Its round, sharp tip is also perfect for slicing through the long tentacles of octopus. The elegant, thin blade allows for uninterrupted slicing, maintaining the integrity and freshness of delicate ingredients. With its longer and thinner profile compared to a Yanagi, the Takobiki is an exceptional tool for preparing delicate ingredients with finesse. Whether performing intricate tasks or everyday preparations, this knife elevates the culinary experience, blending beauty and functionality in every slice.
