The Sujihiki is a specialized slicing knife with a long, narrow blade designed to glide effortlessly through meat and vegetables, preserving the integrity and freshness of each ingredient. This versatile slicer excels at carving and fabricating large roasts and other meats, as well as thinly slicing delicate items like cucumbers or smoked salmon.

Our Yoshihiro Mazaki series is meticulously crafted by master artisans, ensuring high-quality knives that offer exceptional performance and remarkable value. Made from White Steel #2 with a hardness rating of 63 to 64 on the Rockwell scale, each knife features a Black-Forged Kurouchi finish. This finish is created through intricate forging with iron and includes a carbonized coating from heat treatment, giving the blade a distinctive and rustic aesthetic. The Yoshihiro Mazaki series is complemented by a traditional D-Shaped Chestnut handle, handcrafted and affixed with a Water Buffalo horn bolster for added elegance and functionality.
