Enjoy the superior edge retention and sharpness of a high carbon knife without the apprehension of discoloration or rust. This next-generation steel, made possible by recent advancements in metallurgy, was developed to perform in high-paced, high-demand workplaces without the hassle of oxidation. Ginsan blends traditional methods of knife making with modern metallurgy, representing a breakthrough in the incorporation of high carbon steel and stain-resistant metallic elements. With a hardness on the Rockwell scale of 62-63, Ginsan offers a rare combination of traditional Japanese high carbon knives with stainless steel properties. Hongasumi translates as true mist and refers to the beautiful mist-like patterns on the blade that are formed when Ginsan is forged with iron. Ginsan steel is forged by our master artisans to create traditional Japanese knives of the highest quality that provide peace of mind in high-paced environments.

The Maguro bocho tuna knife is an extremely long knife highly specialized to fillet tuna and other large fish in a single cut. This knife is commonly found in Japanese fish markets such as Tsukiji Market, where it is often seen used to fillet tuna. This Maguro bocho represents the highest level of traditional Japanese craftsmanship and is an extremely special collectible piece, truly one-of-a-kind for two main reasons. This knife uses a material that's extremely rare for a Maguro bocho and boasts an exemplary level of finishing rarely seen for a knife of this length. Our Yoshihiro Ginsan Maguro Bocho is extremely rare and perfectly finished in comparison to a standard Maguro bocho. A standard Maguro bocho typically has a rougher finish with imperfections along the blade and may not have a straight blade due to the difficulty of sharpening and achieving an extremely sharp edge.

A custom-matched protective wooden sheath called a Saya is included, which protects the knife and enhances its appearance when not in use.
