It combines exceptional sharpness and optimal edge retention with impressive stain resistance, making it an excellent choice for both intermediate cooks and top chefs. The knife comes ready to use right out of the box and is complemented by a lacquer-coated magnolia wooden sheath that provides odor and stain resistance, ensuring easy cleaning. Each knife is 100% handcrafted in Japan, not mass-produced, reflecting the artistry and craftsmanship inherent in traditional Japanese knife-making.

The Yoshihiro VG-10 Yanagi Sashimi Japanese Knife is specifically designed for sashimi and sushi chefs. Its single-edged blade allows for effortless slicing through the skin and flesh of fish without compromising the taste or quality. Unlike other knives, which may damage cell walls and alter the feel and taste of the fish, this traditional yanagi knife leaves the fish smooth, shiny, and fresh. This high-quality knife is crafted by layering softer steel over a hard VG-10 stainless steel core, ensuring superior sharpness and edge retention, while the surrounding softer steel adds durability.

Handcrafted in Japan using traditional techniques, the Yoshihiro VG-10 Semi-Stainless Steel Mirror Finished Yanagi Sashimi Knife features a completely flat ground front (shinogi) and a concave ground back (urasuki) with a flat rim (uraoshi). The hardness of the VG-10 semi-stainless steel allows skilled artisans to create a thin, sharp cutting edge, resulting in an exceptional tool for any chef. The knife is equipped with a handmade ebony wood handle adorned with triple rings, providing a lightweight and well-balanced feel. It also includes a double water buffalo horn bolster and a lacquered magnolia wood saya cover that is both easy to clean and resistant to stains and odors.

Care Instructions: For optimal maintenance, sharpening and honing should be performed using only water whetstones. Hand wash and dry the knife immediately after use to preserve its quality and performance.
