High Speed Steel is currently considered to be the most advanced stainless steel on the market for high end kitchen knives. A particular significance is the high amount of Cobalt (8%) in the steel alloy which give it its high wear resistance and durability. It makes it perfect for use in its original purpose of industrial machinery, but also excellent in high end kitchen knives which require long lasting edge retention.

It is not easy to forge kitchen knives with High Speed Steel and there are not many knife manufacturers that make the attempt. However, the end results are overwhelmingly positive if done successfully. A particular importance is during heat treatment when the steel reaches in excess of 1200 degrees Celsius. The Yanagi is a long slicing knife designed to cut thin slices of fish for sushi and sashimi.     I can say without a doubt, that this is one of the best yanagibas in existence. I never would have dreamed they would make a yanagi using HAP 40 steel, but here it is. The performance of this yanagi is right up there with the honyaki grade knives. Absolutely amazing. It holds an edge better than any yanagi I ever used in the past. And I’ve used quite a bit. Despite this steel having a rockwell of 64-65, it still sharpens quite easily. Especially compared to ZDP 189 and honyaki knives. And it is stainless. A high performing yanagiba that is STAINLESS. A chef’s dream come true. It has all these great features, and also has a rareness factor. You won’t be able to find a yanagiba that is made of HAP 40 steel anywhere. If you’re a professional chef and take your knives very seriously, don’t even think twice. This is the ultimate yanagiba. A must have. Don’t be surprised if these are rapidly out of stock.
