With a HRC Scale of 64-65, this knife will make and keep its superior edge for an extreme period of time. SG2 Semi-Stainless Steel is a high carbon steel that sits at the pinnacle of maximizing cutting performance and edge retention like no other before it. It is perfect for those professionals who have daily high-volume prep work for extended hours.


Semi-Stainless steel core is clad with Damascus stainless steel, resulting in extreme toughness and durability and ease of maintenance. The Damascus Steel results in beautiful marbled wave like patterns that extend through the blade from the tip to the heel, unveiling a new mosaic with every sharpening. Only the most skilled of artisans can forge together these metals in such complex puzzle piece formations to fashion knives of this caliber with the highest quality, blending aesthetics and performance.

    I know a lot of people review knives and say, “it was razor sharp right out of the box”. I will tell you in this instance, this statement is no exaggeration – and “sharp” really does not describe it. I took it for a test drive on an onion and produced unbelievably fine, thin, small cuts, all with a 270mm blade. I hear a lot of folks saying you need a serrated knife for tomatoes – you just need a very sharp knife. I am still looking forward to cutting up meats (cooked and raw).

    This knife is sharp in another way too – appearance. The pictures on the site simply do not do the blade justice (no offense to the photographer), you must see it up close to really appreciate the pattern, the feel and true beauty attained by clearly superior craftsmanship. The Damascus pattern, while mostly smooth, does have a slight undulation you can feel, while subtle it adds depth to the looks. Additionally, the handle, while outdone by the blade, has a beauty all its own.

    Fit and finish are superior, the handle is longer than many knives but if you have big hands you will love it, if you have average to small hands I suspect two things – one you would possibly go with a the 210 or 240mm version or you would adjust your grip (note though if you have small hands and go with the 270mm blade, I would suspect the handle will run up your forearm and may be uncomfortable). For something running (roughly) 420mm in overall length you might expect something unwieldy… not here. This is very well balanced, and while a little on the heavy side (sorry, I did not weigh it), it’s use is truly effortless.

    A few final notes – the Saya is very nice, sturdy and tight, the blade fits perfectly. If you are going to store it in a knife block (with slots, i.e. a traditional block) you will need a wide opening for it. I am working with someone to build a custom block so the knife can be seen and appreciated (hidden magnets on a slab of maple). If you are willing to put down the money, you will not be disappointed. I cannot recommend this knife enough, I truly love it.
