High Carbon Steel Explained: White Steel, Blue Steel, and Super Blue

High carbon steel is prized in Japanese knife making for sharpness and edge retention. Unlike stainless steel, which contains at least 12% chromium for rust resistance, high carbon steels like White Steel, Blue Steel, and Super Blue are built around cutting performance instead. Here's how they differ and how to think about choosing between them.

What Is High Carbon Steel?

High carbon steel typically contains between 0.6% and 1.7% carbon by weight. That elevated carbon content gives it excellent hardness and the ability to take a very fine edge.

It's also easier to forge than stainless steel. Stainless needs to be heated to roughly 1050°C to become workable, while high carbon steel is typically workable around 850°C, depending on the alloy. The lower forging temperature and simpler composition make it more predictable to work with.

Because it lacks the alloying elements that make steel "stainless," high carbon steel is also easier to sharpen — it responds quickly to a whetstone and takes a fine edge with less effort than most stainless steels.

White Steel, Blue Steel, and Super Blue: The Main Differences

All three are high-quality high carbon steels with subtle differences in composition, and the real-world performance gap between them is smaller than a lot of marketing suggests. Craftsmanship — how the steel is forged, heat-treated, and finished — generally matters more than which of these three you pick.

White Steel is the purest of the three and the easiest to sharpen, which makes it a common choice for precision work like slicing sashimi. It takes an extremely fine edge but is also more delicate, particularly in its higher-carbon form.

Blue Steel adds small amounts of tungsten and chromium for better edge retention and toughness. It's somewhat harder to sharpen than White Steel but holds an edge longer, which suits general kitchen use.

Super Blue Steel adds more alloying elements, including vanadium, for greater wear resistance. It's also noticeably harder to forge well — the margin for error is small, and quality depends heavily on the smith's skill. A well-forged White Steel knife will outperform a poorly forged Super Blue knife.

All three steels can produce excellent knives in skilled hands. Rather than picking based on steel name alone, focus on the quality of the knife overall.

White Steel: #1 and #2

White Steel (Shirogami) is one of the most widely used steels in traditional Japanese knife making, valued for its purity and how readily it takes a razor-sharp edge. Its simple, low-alloy composition responds predictably to heat treatment, which is part of why so many blacksmiths work with it confidently.

Benefits of White Steel

White Steel suits clean, precise cuts, which is why it shows up so often in traditional Japanese cuisine. It sharpens quickly, making it a good match for delicate tasks like filleting or thin vegetable slicing.

White Steel #1 vs. #2

The difference between the two grades is subtle but matters for performance and forging risk:

White Steel #2: Slightly lower carbon content makes it more forgiving, both in use and during forging. It's easier to sharpen, less brittle, and more stable to manufacture — a solid default for professionals and serious home cooks.

White Steel #1: Higher carbon content allows for a sharper edge and somewhat longer edge retention, but it's more brittle, harder to sharpen, and less forgiving in the forge. Even experienced smiths treat it carefully.

Blue Steel: #1, #2, and Super Blue

Blue Steel (Aogami) is a high carbon steel with added tungsten and chromium for better wear resistance and toughness. The performance gap between Blue Steel and White Steel is real but often overstated, and it comes with trade-offs in sharpening difficulty and cost.

Why Choose Blue Steel?

Blue Steel's main advantage is toughness — the tungsten content adds strength and wear resistance. The edge retention gain over White Steel is modest, and sharpening Blue Steel takes more time and skill because of its harder composition. It's not a straightforward upgrade over White Steel, just a different tool for different priorities.

Blue Steel #1, #2, and Super Blue

It's more useful to compare these by forging difficulty and intended use than to rank them. A closer comparison is Blue Steel #2 to White Steel #2, or Blue Steel #1 to White Steel #1, than the Blue Steel grades against each other.

Blue Steel #2: Slightly lower carbon with a good balance of toughness and edge retention — the most versatile of the Blue Steels and a solid choice for professionals who want durability without excessive sharpening effort.

Blue Steel #1: Higher carbon content for more potential sharpness, at the cost of more brittleness and a less forgiving forging process.

Super Blue Steel: The highest carbon content of the three, with vanadium added for wear resistance. It's genuinely difficult to forge well, and only a limited number of smiths work with it consistently. Well-forged Super Blue performs very well; poorly forged Super Blue can underperform a simpler steel. It also costs more and is harder to sharpen.

How to Choose the Right High Carbon Steel

The right choice depends less on what you cook and more on how you use and maintain a knife, plus your comfort with sharpening.

1. Your Sharpening Comfort Level

High carbon steels all respond well to whetstones, but harder steels demand more precise technique. White Steel is the easiest to sharpen, Blue Steel is moderately harder, and Super Blue is the most demanding. If you're new to whetstone sharpening or only sharpen occasionally, White #2 or Blue #2 are more forgiving starting points. If you've sharpened regularly for a few years and are comfortable with burr control and consistent angles, White #1 or Blue #1 are reasonable options. Super Blue is worth considering once you have real sharpening experience and are prepared for the extra care it needs.

2. How You Actually Use Your Knife

Match the steel to your real habits, not just your cooking goals. If you're rough on knives, use a lot of twisting motions, or prep on hard surfaces, the more brittle steels — White #1 or Blue #1 — are more likely to chip. Used carefully, on a forgiving cutting surface, those same steels can hold a very fine edge.

3. Sharpening Frequency and Maintenance

None of these steels resist rust the way stainless does, and the sharper you keep them, the more often you'll need to touch up the edge. If you enjoy sharpening and don't mind doing it often, any of these steels will reward the effort. If you'd rather sharpen less, White #2 or Blue #2 are the more forgiving picks.

4. Budget

Price isn't just the knife itself. Super Blue costs more partly because it's harder to forge and maintain — you'll want quality whetstones and possibly professional sharpening. If you're working with a tighter budget or still building sharpening skills, White Steel #2 or Blue Steel #2 are more affordable and easier to live with.

There's no single "best" steel — the right one fits your skill level, habits, and budget. A well-forged White Steel #2, properly maintained, will outperform a poorly maintained Super Blue.

Maintenance Tips for High Carbon Steel

High carbon steel needs more attention than stainless, in exchange for better edge performance. To keep it in good condition:

  • Dry it immediately after use to prevent rust.
  • Store it dry — a saya cover, knife block, or magnetic strip all work.
  • Oil it occasionally with mineral oil, especially before longer storage.
